J&J è l’interpretazione in chiave moderna del mortaio classico, tradizionalmente usato per la preparazione del pesto. Il blocco contiene 2 mortai, il grande (in Bianco Carrara) per i pestati di media quantità e il piccolo (in Portoro Vena Oro) che con le sue dimensioni ridotte facilita l’operazione di sminuzzamento e polverizzazione di sale, pepe, etc.

J&J is a modern view of the classic mortar, traditionally used for preparation of italian pesto. The block contains 2 mortars, the larger one in Bianco Carrara marble for medium quantity crushed ingredients, while the smaller mortar in black Portoro (fine vein) marble for the pulverization of salt, pepper, etc.

Vengo da quella “terra di confine” in cui la Toscana e Liguria si incontrano e si intrecciano creando un variegato mix di culture e tradizioni che si fondono e divergono allo stesso tempo, la Lunigiana. Una terra antica, ricca di tradizioni e di storia. Ed è proprio da queste mie origini che è nata l’idea del mortaio J&J, dai ricordi della mia infanzia quando la nonna preparava i “panigacci” con il pesto, un piatto povero ma gustosissimo, preparato con oggetti antichi e un po’ dimenticati, il “testo” per i panigacci ed il “mortaio” per il pesto. Come erano buoni i panigacci della nonna Orlandina! Lei non consultava ricette, li faceva “ad occhio” e non usava timer perché conosceva i tempi e il numero di testi da impilare per una cottura perfetta. Una vera e propria arte che ha appreso con gli anni e l’esperienza, tanto da saper riconoscere la buona qualità del testo in terracotta dal suono che emetteva ... quando lo “batti, se suona in un certo modo – diceva – allora è ben fatto!

Ho scelto il mortaio perché è un oggetto solido, destinato a durare nel tempo e ad essere tramandato di generazione in generazione. Quindi, perché non provare a riprogettarlo e trasportarlo nel XXIesimo secolo? Una sfida alla quale non ho potuto sottrarmi: ripensare un “utensile della tradizione” per renderlo più moderno e funzionale, adeguato anche alle necessità di una cucina internazionale e non solo italiana. Il mortaio J&J nella sua composizione è pensato per preparare salse deliziose, tipiche della tradizione italiana, ma anche mix di spezie e tanto, tanto altro ancora.

La tradizione locale lo vuole in marmo di Carrara e questo è un particolare non negoziabile. Ed ecco che J&J è un blocco di marmo, il Bianco di Carrara, nel quale è scavato il mortaio nella sua forma più tradizionale, abbinato ad un mortaio più piccolo in Portoro ed un pestello, il tutto chiuso da un elemento giallo che funge anche da base per il mortaio più piccolo.

I come from that “borderland” where Tuscany and Liguria meet each other and intertwine, creating a diverse mix of cultures and traditions that merge and diverge at the same time: that is Lunigiana. An ancient land, rich in traditions and history. And it is right from these roots of mine that I took the idea of the “J&J mortar”; from my childhood memories when my granny used to make “panigacci” with pesto sauce, a poor but very tasty dish, prepared using ancient and rather forgotten tools like the “testo” for panigacci and the “mortar” for pesto. How delicious granny Orlandina’s panigacci were! She never referred to recipes as she used to make them just with her eye and did not need a timer as she perfectly knew the number of “testi” to be stacked and the time for a perfect cooking. A true art that she learned over the years and with experience, so much as to become capable of recognising a good quality terracotta-made “testo” by its sound… when you tap on it, depending on how it sounds – she used to say – then you can tell if it is well made!

I chose the mortar because it is a solid item, meant to last over time and to be handed down from generation to generation. So why not trying to re-design and transfer it into the XXI century?
A challenge which I would not evade from: re-thinking a “traditional tool” to make it more modern and practical, also suitable for the needs of an international cuisine and not only for the Italian one. The “J&J” mortar, in its structure, has been designed to prepare delicious sauces, typical of the Italian tradition, as well as a mix of spices for instance, and much much more.

The local tradition requires marble from Carrara and that is a non-negotiable condition. Therefore the J&J is a block of White Carrara marble in which a traditionally shaped mortar has been carved out, paired with a smaller Portoro mortar and a pestle, all closed by a yellow element that also serves as base for the smaller mortar.

Ho deciso di chiamare questo progetto J&J perché ispirata dal legame profondo tra due grandi artisti americani, Johnny Cash e June Carter che, diversi uno dall’altro e complementari allo stesso tempo, hanno dato vita a quella che molti definiscono la più bella storia d’amore del ventesimo secolo, vissuta, alimentata e difesa con tenacia nonostante le difficoltà che la vita dissoluta di Johnny presentava loro. Perché la vita, quella vera, è fatta di luci ed ombre, di grandi felicità e di profonde tristezze, di colori contrastanti e di opposti che si attraggono, talvolta in maniera indissolubile. Un primo incontro nel 1961 e lui l’aveva già scelta “Tu ed io ci sposeremo un giorno” e così fu, diversi anni più tardi ma poi fu per sempre. Così scriveva Johnny in una lettera dedicata a June:
“Ci leggiamo nella mente, pensiamo allo stesso modo. Sappiamo cosa ciascuno vuole dall’altro senza neanche chiedere.(...) Tu mi spingi a dare sempre il meglio di me. Sei l’oggetto del mio desiderio, sei la prima ragione sulla terra della mia esistenza. Ti amo tanto”.
Allo stesso modo il contrasto dei colori, la complementarità delle forme dei due mortai e la consistenza dei materiali fanno di questo oggetto un tutt’uno armonico e indissolubile, destinato a durare per sempre esattamente come l’amore tra Johnny e June.

I decided to name this project “J&J” because I was inspired by the deep bond between two great American artists, Johnny Cash and June Carter. So different from one another and yet at the same time so complementary, according to the opinion of many they gave life to the most beautiful love-story of the 20th century. A story lived, fuelled and defended with tenacity despite the problems that Johnny’s dissolute life posed to them. But real life is made of lights and shadows, of great happiness and deep sadness, of contrasting colours and opposites attracting, sometimes in an indissoluble way. It just took their first encounter in 1961 for him to choose her… “One day you and me will get married”…and so it was, many years later but for ever. Johnny once wrote in a letter dedicated to June:
“We read each others minds, we think alike. We know what the other wants without even asking. (…) You influence me for the better. You are the object of my desire, the first earthly reason for my existence. I love you very much”.

In the same way the contrast of colours, the complementarity of the shapes of the two mortars and the consistency of the materials make this object a harmonious and inseparable single whole, destined to last for ever just like the love between Johnny and June.
